From her early days at the Ecole d’Hotellerie et de Tourisme Paul Dubrule in Siem Reap, Kimsan Pol’s journey has been remarkable.
With a natural talent for creating delicious dishes, she quickly moved up in the culinary world.
Chef Kimsan’s work, blending traditional Cambodian flavors with modern twists, has gained international recognition and many accolades at the restaurant Embassy Khmer Gastronomy in Siem Reap.

Chef Kimsan has honed her skills with three-star Michelin chef Regis Marcon, shared her expertise at the prestigious Lausanne Hotel School in Switzerland, and had some training in a one-star Michelin restaurant in Japan.
Invited by Prime Minister Hun Sen, she also showcased Khmer cuisine at the World Economic Forum in Davos.
These milestones highlight her dedication to promoting Cambodian cuisine globally, inspiring future chefs, and innovating within the culinary arts.

Inspired by a desire to make good, authentic Khmer food accessible to all, Chef Kimsan is opening Amok Restaurant.
The menu is intentionally limited to highlight the best of Cambodian cuisine, featuring two signature dishes: the traditional breakfast dish, Num Banh Chok, and the evening favorite, Amok.
Each dish is a tribute to Cambodia’s rich culinary heritage, prepared with the finest local ingredients and Chef Kimsan’s unique touch.
